Chick Pea, Mint and Tomato puree Crostini

with Parmigiano-Reggiano cheese shavings. Wine suggestion: Douro Valley red wine. Serves 4

Ingredients:

  • 300g of Chick Peas
  • 8 slices of baguette
  • 6 Mint Leaves
  • 10 Cherry Tomatoes
  • Olive Oil
  • Parmigiano-Reggiano cheese shavings
  • Salt and pepper
  • 1 Garlic clove

Preparation:

  1. Slice the baguette (or ciabatta if you prefer) into slices.
  2. Toast the slices of baguette.
  3. Chop up the cherry tomatoes and mint leaves and place them into a food processor along with the Chick Peas and some Olive Oil and a pinch of salt and pepper.
  4. Purée the ingredients until mixture is smooth.
  5. When the bread is toasted, rub one of the sides with garlic.
  6. Place the Chick Pea, Mint and Tomato puree onto the baguette slices and sprinkle with Parmigiano-Reggiano cheese shavings.
  7. Drizzle with olive oil before serving.
