Chick Pea, Mint and Tomato puree Crostini
Ingredients:
- 300g of Chick Peas
- 8 slices of baguette
- 6 Mint Leaves
- 10 Cherry Tomatoes
- Olive Oil
- Parmigiano-Reggiano cheese shavings
- Salt and pepper
- 1 Garlic clove
Preparation:
- Slice the baguette (or ciabatta if you prefer) into slices.
- Toast the slices of baguette.
- Chop up the cherry tomatoes and mint leaves and place them into a food processor along with the Chick Peas and some Olive Oil and a pinch of salt and pepper.
- Purée the ingredients until mixture is smooth.
- When the bread is toasted, rub one of the sides with garlic.
- Place the Chick Pea, Mint and Tomato puree onto the baguette slices and sprinkle with Parmigiano-Reggiano cheese shavings.
- Drizzle with olive oil before serving.
