with two cheeses, pear and honey caramelised onions. Wine suggestion: Red Douro. Serves 4 as a starter.
Ingredients:
For the pizza dough:
- 650g strong white flour
- 1 tablespoon salt
- 7g sachet of instant yeast
- 2 tablespoons olive oil
- 350ml warm water
For the topping:
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 1 teaspoon honey
- 175g shredded Mozzarella
- 175g crumbled Gorgonzola
- ½ ripe pear, sliced
- 60g Parma ham, cut into 2.5cm strips
Preparation:
- Mix together the dry ingredients for the pizza dough. Stir in the olive oil. Add as much of the water as you need to make a soft dough. Knead the dough on a floured surface until smooth and elastic then transfer to a clean, oiled bowl. Cover with a tea towel and leave until doubled in size.
- Preheat the oven to gas mark 6/200°C. Lightly grease a baking sheet.
- In a heavy-bottomed frying pan heat the oil until hot. Add the onion and reduce the heat. Cook, stirring frequently, until the onions are well cooked and browned (about 30 minutes). Stir in the honey.
- Spread the pizza dough on a baking sheet and press to make a 17 X 32cm rectangle. Sprinkle with Mozzarella and Gorgonzola. Bake near the top of the oven for about 10 minutes.
- Remove from the oven and spread the onion over the cheeses then top with pear slices. Return to the oven and warm until hot. Top with Parma ham.
